Rice Cake
Rice cakes have long been considered a "diet" food because they are low in calories and fat. They don't really provide many nutritional benefits, and I personally find they feel like eating a piece of Styrofoam! However, they now come in a variety of flavours which help make them more bearable. They have around 1 gram of protein. They make a great base though for this snack.
Guacamole
Here's the real powerhouse of this snack. Avocado has become a popular fruit lately (Yes, it's a fruit!) Although it is higher in calories and fat, it contains unsaturated fat which actually lowers blood cholesterol and blood pressure. It contains vitamin C which helps strengthen the immune system, blood vessels, tendons and ligaments and keeps skin and hair healthy. Guacamole also contains the fat soluble vitamin E which helps slow oxidative damage to the body's cells, helps control inflammation in the body, helps prevent nerve damage and muscle weakness.
Salsa
Homemade salsa is going to be best choice, however, if you're not in the mood or don't have the time to cut all the veggies and make it, look for a brand that contains all natural ingredients. Salsa is also a good source of vitamin C. It also contains Magnesium, Phosphorus and is loaded with fiber. It contains Vitamins A, E, K, B6, Potassium, Copper and Maganese. The only downside... It tends to be high in sodium, This recipe thankfully, doesn't require a lot... just enough to top the rice cake and guacamole for added flavour.
DIRECTIONS
Ok, this recipe really can't get much easier...
1. Lay rice cake flat on a plate.
2. Spread a layer of guacamole over the top side of the rice cake
3. Top with a tablespoon or two of salsa.
4. Enjoy!
