salads. My homemade salads are legendary! I usually buy all the makings on a
Sunday, grab 6-8 single serving containers and make a bunch of salads up Sunday
afternoon. As I am leaving the house I grab a container with my ready made
salad and am good to go. A typical salad for me includes; spinach leaves,
lettuce, snap peas, sliced cucumbers, red and green peppers, zucchini, sliced
mushrooms, black olives, sliced or baby carrots, spicy pepper rings, broccoli,
and sliced red Vidalia onions. I usually add protein right before eating by
adding either grated cheese, tuna, sunflower seeds, walnuts or fat free cottage
cheese (you may add turkey or chicken breast as well). This is a healthy, low
calorie quick lunch or supper idea. Now get this... there are days when I am in
a rush or can't eat a messy salad because I'm "on the go". Solution... I take
all the salad makings and put them in a wrap! I will usually spread some
flavoured humus on the wrap then add the various salad ingredients, wrap them
all up, folding the bottom end so everything doesn't fall out and voila, salad
on the go! For a little extra warm goodness I like to microwave the wrap for a
30 seconds before eating.
So there you go... salad on the go! Be careful to not ruin you low calorie,
nutritious meal by adding a croutons or salad dressing that may contain a lot of
calories and fat! Enjoy!
