My veggie wraps are wrapped in Sundried Tomato and Basil or Spinach Wraps! I find these are more nutritious and taste better than traditional tortilla wraps.
Ingredients:
Roasted Red Pepper Hummus
Guacamole
Horseradish Sauce
Red, Green, Yellow Peppers
Cucumber
Zucchini
Red Onion
Spinach
Kale
Simply slice the peppers length wise in thin strips, slice cucumbers and zucchini and then quarter them, slice the red onion. Spread the hummus and guacamole on the wrap, add the above ingredients and finally add horseradish sauce for a little extra kick!
Wrap the veggies as you would a burrito. I like to make up 8 or more and wrap them tight in Saran Wrap to keep them together and wrapped tight. I store them in the fridge. They are convenient to grab as I head out the door, take to work or eat on the go. I like to warm mine up in the microwave for about 45 seconds before eating.
You can adjust the ingredients, add cheese etc to suit your own personal taste and dietary needs.
